I presume you are already aware of the series Love, Death & Robots on Netflix? It was originally intended as a sequel to the Heavy Metal movie. Unlike most anthology shows, most of the episodes are adapted, with good fidelity, from preexisting short stories. Someone finally started exploring the miles of bookshelves of science fiction and fantasy for stories worthy of adaptations.
The first season of LD+R even has an official e-book anthology comprising every story they adapted for the show.

It’s on my TBR pile. I hadn’t actually read any Alastair Reynolds or Peter F. Hamilton (but I had at least heard of them, unlike certain parties) prior to LD+R. My first exposure to those two authors were the anthologies containing their short stories that had been adapted in LD+R. I have read both of those anthologies plus Reynolds’ Pushing Ice.
BTW, the 16 stories adapted for the first season of LD+R (and 2 scripts) have been collected in a show-specific anthology.

You might take a look at Shadows Beneath by the authors from the Writing Excuses Podcast. They did an anthology that included the original drafts, transcripts of their critique sessions and then the final drafts. It's very informative.
Brandon Sanderson also does readings from his upcoming works and posts them to his YouTube channel. These are rough chapters that haven't been edited or are only lightly edited for readability.
Future Visions: Original Science Fiction Stories Inspired by Microsoft sounds like a dirge, but it's got some excellent stories by top tier authors, I reviewed it as a four stars effort. And it's free on Kindle!
The Collapse and Destination: Tomorrow. Both are zombie fiction. The Collapse is a zombie outbreak scenario. Destination is a post-apocalyptic romance.

My published novella doesn’t have any overt LGBTQ people, but it has a character who will later come out as lesbian in the sequel! It’s called The Collapse. It’s a zombie outbreak scenario.
