Mana Harvest by Wolfe Locke would count, though it might not have as much detail as you'd like.
Tallrock by Xander Boyce is about a man who basically lives inside an immersive VR game and is trying to set up a farm and settlement. It does have other characters and a fair bit of adventuring, but he's very focused on the farm and settlement.
It has been sometime.
My favorite series, "The Retired S Ranked Adventurer" just crossed a threshold I thought I'd never see. 800 ratings.

Been enjoying Apocalypse Parenting on Royal Road. Just about to read the chapter with the neighborhood meeting the MC arranged. Should be interesting. Hopefully not too many idiots show up.
On my kindle, I'm reading Mana Harvest: Sword to Ploughshare Farming Litrpg by Wolfe Locke and James Falcon. A man who just finished 20 years in the city guard decides to buy the farm in a town a day's travel away. He's getting the place fixed up and getting to know the locals, who are only too happy to help him out. Nice slice of life story so far, with very minor litrpg elements. There have been some continuity mixups, like a mention of him storing things in the cellar before he'd opened it up. Not enough to really affect the story, just enough to throw me out for a second thinking, "Wait a minute...?" Still a fun read.
