Not true at all. Digitals are available for sale on multiple platforms, including Amazon and Bookwalker. It's also extremely easy to find pirated versions for all translated light novels if that's your thing.
Amazon has both the manga volumes and light novel volumes on sale. Here's a Link for the first volume of the LN. The WN only has fan translations - you can find them pretty easily on google.

You don't have to buy the whole series. Try the first book. That will give you an idea of how much content was skipped.
If you are still hesitant, you can try the first couple of chapters of the LN for free here. That will give you an idea of how much is cut down.
All of Kumoko's (spider girl) monologuing, her planning, her fights, her skills, and on. In other words, a lot of her characterization, as well as foreshadowing for future events. They also cut out a lot of the human side of the story. It was always a side thing, but it's even more so in the anime. They also cut out a lot of talk about how skills work, which is important. For example, the "Ruler" skills have mental effects, which is part of the reason for Kumoko's behavior changing partway through the story.
for your first question id say it a combination of both Rudeus being stronger than expected and luck being weaker than expected. as far as i can remember i don't recall the book showing any example of luck being strong, I too just thought that since hes a bodyguard to the princess. but in Rudeus case hes had experience fighting and training with quite a number of noteworthy people. also ever since he separated with eris hes being training physically every day.

Yes, they seem to be out of stock fairly often, and we have heard reports of specific volumes like #2 being out of stock all throughout the year, I'd rather recommend the digital versions, if you can read digital media for extended periods of time.
Amazon is carrying them in the Kindle service, I think you can buy them there though I suspect any of the stores that Seven Seas link to have a European counterpart, no French translation as far as I know though.
If you buy the digital version you'll get the updated one either way, if you're going to look for the physical one it should say: "Second Edition" somewhere in there.
I think people honestly underestimate how often they'll re-read the series or their favorite parts of it, regardless, the digital versions come out every 2 months, which is fairly quick all things considered, if you cannot wait you can always jump from the LN volume to the Web Novel volume which is largely the same story though the LN is better edited and adds some content that you can check out once the translation reaches it, either way it depends on your mileage.
