I'm not crazy into flight sims or anything, but I picked up a HOTAS One for Elite Dangerous and feel it's great for my needs. I don't love how short the cord is connecting the throttle and stick, but everything else has been great.
For that price, you could do far worse.

Do not, i repeat, DO NOT buy that wheel. It will cost you more in the long run. That wheel does not have force feedback. You'll find it incredibly difficult to drive a car without it. You'll most likely give up. Spend a little more for a force feedback wheel. Either you buy that wheel, realize your mistake, and spend more on a FFB wheel, or you give up trying to race because it's too difficult.

The joycons suck, but the pro controller is one of the best controllers on the market right now. Unless you want to spend the, like, $300 on an Xbox Elite 2. I... did. But I also hate Playstation controllers. How do your hands not cramp up with the joystick location on those?
Nintendo shit is pretty expensive though. I'm not sure how parents justify buying it for their kids. $300 for a console and $60 for each Nintendo title adds up. I only buy physical for this reason, though. I would assume they'll continue to retain resale value down the road, but let's be honest I'll never sell my games.
In any case I always felt the switch's primary attraction was it's portability, which owes it's form factor and the joycons to that end. Also I don't know why people are buying switch lites. Can't plug that into your TV at home. It's like you're buying half the product for like $50 off the price of the real thing.
Anyway, it's a short Nintendo rant. As an adult with expendable income who wants to game on a Switch, the prices really don't bother me that much. I feel like the person in OP's post never bothered to read any of the descriptions on the products they bought, just threw cash at Nintendo without any understanding. We should all know that digital products with Nintendo are ephemeral, and if you don't know that the prices will never drop on anything then you must have been born yesterday. Nintendo has always been like this. Accept it or don't, but it's nothing new.

Not the BEST solution, as it requires some cash, but I picked up a Turtle Beach adapter with mic monitoring and superhuman hearing and it is awesome. $25 on Amazon.
Careful with the Thrustmaster naming convention. You're talking about the TMX <strong>which can be bought brand new off of Amazon for $160</strong>. Even the 3 pedal Pro version is only $250
What you're thinking of is probably the T300's or maybe T500 which is more around the $400 price point.
I saw this every time I see an elite post. Just buy a Razor wolverine elite controller or the Power A Elite Series 2 controller. Do not get the cheap version of these brands. Get the most expensive one and it will still be cheaper and higher quality than the Microsoft elite Series controllers.
Please please do not buy another one of these. I've had 2. My friends have had a couple. They are absolutely the worst and lowest quality main stream competitive controller you can buy. Only good thing is the special thumbstick tension customization you get. Still not worth it. All my friends have this controller

You just need a headset adapter, then you can plug any compatible 3.5mm stereo headset into it and you'll get both game audio and chat.
I'm assuming the one you have is the single ear chat headset?
The MS stereo headset adapter is discontinued and kinda expensive to buy these days, but there are third party versions, such as this: -

I use one for Elite Dangerous. It's decent but the build quality is kinda meh. Word is there are some other sticks on the horizon as well.

For a $700 budget: Go with a Thrustmaster TX and the TH8A Shifter.
You have a great base, good starting wheel, decent pedal set. (Comes with the TP3As, but not the new Load Cell ones.) And, the shifter completes the base package. You can then later get more wheels, such as a F1 style if that's your fancy, and upgrade to load cell later on.

I can confirm it works on the Shield TV 2017. I accidentally purchased the new one (Core Controller) thinking it was previous model. Works great on my Shield but does not work on my iPad Pro.
