I used a 4.5mm hook with this pattern. I had tried out a much more complicated Star with a puff stitch and got frustrated since I’m new to this. This pattern was super easy and cute! I’ll probably add glitter to make them stand out.
Retractable measuring tape, a yarn needle, a pen, and ALWAYS my Clover yarn cutter pendant (which I bought at Michaels rather than amazon, but that was the first link that came up). When I don't have this in my project bag, I always regret it.
I bought a pendant thread cutter for £5 on amazon and it's been brilliant for flying! I hooked yarn through the eye and wear it as a bracelet so I don't lose it and don't have to take it off when I need to cut thread. I also second the suggestion of ziplocs, especially if you're taking a few projects. I've just got back from holiday and I just sorted floss, linen and a printed copy of any patterns into a ziploc for each project and I managed to take three with very little space taken up! Nothing better than stitching on a plane to make the time disappear :D
Also, not packing, but I downloaded episodes of stitch & bitch podcast which was so fun :)

There is a reason that traditional Fair Isle sweaters never ever use more than two colours per row, and this is that reason. There's a Kaffe Fassett pattern from his first book, the Dark Star Coat, that I always thought was incredibly beautiful but I knew I'd never make it because the entire massive garment is three colours per row, and fuck that. Two colours or death.
My own solution to this sort of thing would be to Swiss darn small areas of colour in place over a two-colour Fair Isle: for example, in the bottom stripe, I'd have worked it in black and grey, and then duplicate-stitched the white areas.
Anyway, that's no help to you, as you've already made an entire section. Clover makes a device that will carry up to four colours of yarn: perhaps that will work for you.

There’s also fancy yarn bowls. I got one for Christmas and it beautiful but any cheap bowl or bucket could help with containment if you are worried about it falling off the couch.

I second getting a yarn winder! I don't usually buy hanks so I don't have a swift but I do have this and it's amazing!
Cake your yarn with the winder and then pop it on the holder and work from the outside in. No tangled yarn, no yarn barf and no collapsing yarn (which happens when you centre pull)
I don't know if it would cut yarn, but there's a pendant thread cutter (?) That a lot of cross stitchers use for travel.

For scissors cutting yarn there are rlly cool yarn cutters online. Where they are these necklaces with blades between pieces tht u cant rlllly put ur finger in or anything so u just slot the yarn and tug, and its cut

Scissors are scary with amigurumi because if you accidentally cut the doll, the whole thing falls apart.

The pendant above has little "hook" areas with a sharp blade on the inside, so you can cut any yarn right up against the body (necessary for amigurumi) and it will not cut any other yarn on accident. You also cannot accidentally cut yourself. I rarely ever use Scissors anymore (only for cutting big ribbons). It can be put on a chain/yarn strand and worn around the neck even!

I have this one and absolutely love it. It completely disassembles so it doesn’t take up much space, and you don’t have to attach it to a table with a vice grip. I also think it’s way easier to load compared to the umbrella style ones.

Those photos show it on their pointer finger, but I wear mine on my ring finger and still weave the yarn under my middle and guide with it over my pointer, but it stops me from gripping the yarn with with my ring and pinky fingers and makes things smoother for me
Maybe a better comparison would be consenting to a search of your car. In the two states I've gotten my license, refusal to take a breathalyzer is an automatic DUI. But a cop has to have reason or consent to search your vehicle. A lot of people will say to just give consent if you have nothing to hide because it's easier. But this just opens a window for the cops to find any small matter of incriminating evidence.
As a teenager, a cop strong armed my friend into giving consent to a search because we were parked and watching a hurricane roll in (very small town, it was that or hanging out at the Walmart.) Obviously, there was nothing in the car. But the cop tried to put the fear of god into us or something by insisting a pendant like this constituted contraband or paraphernalia because it had a blade inside.
Do the breathalyzer. Don't consent to search with out probable cause.
