I’ve never purchased from either Hoss Tools or Bootstrap Farmer, but I had a quick look at their products. Personally I don’t care for the Hoss Tools stuff because they look like non-standard sizes. (If they change their product line a few years down the road, you’re screwed if you need replacement parts or want to buy piece parts that fit.)
I use 1020 trays without holes. For added strength, I use daisy trays underneath (outside) of the trays.
I quit using cell trays/plug flats because it’s too hard to get the plants out quickly. Also, by using individual pots, I can mix different plants with different germination times in the same trays and as they sprout I can remove the pots from the humidity dome. For smaller seedlings I use these small plastic pots from a firm in Oregon and can fit 50 per tray. For seedlings expected to get larger, I use square Kord or Anderson brand pots in larger sizes like 3-inch, 4-inch.

This is all pretty similar to what Bootstrap Farmer sells except BF is more expensive. Example: BF 10-pack of trays is $55 versus Greenhouse Megastore 10-pack of trays is $34. Also the GM trays are a slightly thicker gauge.
Some other thoughts:
I stocked up over a timeframe of 10 to 12 years ago. I haven’t broken any trays yet except one which I left sitting in the driveway and a visitor drove over it.
The trays are sturdy on their own but they do have some flex which doesn’t pair well with my ham-fistedness, which is why I use the daisy trays underneath.
The tall plastic humidity domes need to be handled more carefully than 2-inch tall domes. Also, with time (3-5 years) they turn yellow especially if you forget and leave them in the greenhouse all summer.
I still sometimes use the remaining cell trays/plugs I have when planting a lot of one type of plant. I raided my husband’s workbench and use a spatula type tool like this to remove/pry seedlings out of the cells.
