I have never tried mofongo. But I’ve heard the word before LOL. Most of my Spanish/Latin experiences are Brazilian and Traditional Mexican, I’m not to big into the Tex Mex. but I’d you like Asian food there is a killer cook book I just started using. The recipes are super simple, they don’t require special equipment and the pack a serious punch of flavor. It’s called 101 Asian dishes you need to cook before you die. there is a curry coconut chicken recipe it has become a staple in our house.
This is broader than just Thai, but pretty good https://www.amazon.com/Asian-Dishes-Need-Cook-Before/dp/1624143822
