The filter needs to survive a long soaking and then strain the coffee without clogging or tearing with no structural support. You might be able to rig up a system to filter through cloth or a paper-covered mesh, but the Toddy is designed to be used with those filters, and they aren't terribly expensive. If you want something that can easily be used with disposable paper filters, the Oxo Good Grips cold brew maker is a much better choice.
I use this cold brew method. It has a metal screen filter + a paper filter. Previously all my beans came from Peet's and I just asked for a coarse ground. I typically do room temp at 12-14hrs. What would you suggest for this? Also I heard its good to have it on as i change the setting, is this correct?
I've never tried steeping it in the fridge or nearly that long. Does a cold steep have a big effect?
I'd recommend checking out the Oxo cold brew maker ([link]) It works beautifully, and makes it super simple (plus it gives you the brewing instructions).
I got mine from Home Goods for $30 (they just happened to have 4 on the shelf earlier this year, but haven't seen them since.) You can also pick it up at Kohls.com and use a coupon to save a little bit.
Also... I don't think that the Christmas Blend is gonna taste very good. A) it's probably expired and B) that type of blend won't taste the best. Look for a roast that has some some sweetness to it (Costa Rican/Guatemalan)

First you pour in 8 oz. this will be absorbed by the freshly grind coffee. Then you pour in 32 oz more. You will get about 32 oz after 12 hours of brewing. The others are correct: the decanter can hold 32 oz of concentrate.
The tank that contains the grounds and water (which eventually deposits the concentrate into the decanter) can hold 64 oz of water, in the absence of coffee grounds, so there is some room for additional water above the recommended 40 oz, if wanted.

I make it because the taste is smoother and I can make one batch over the weekend for iced coffees for the whole week. It's also stronger so the ice melting in it isn't such a big deal.
I use this coffee maker, but $50 is a bit steep for it.
