I've had good luck with this antenna and a netgear nighthawk through AT&T.

I only have experience with two. The MoFi 4500 and the Netgear Nighthawk M1 (and M5). The MoFi has manual band locking configurable from the admin page, but you have to configure the M1 using AT commands over some sort of telnet client (great tutorial here: https://mt-tech.fi/en/enable-manual-band-selection-on-netgear-mr1100/). So it really depends on how comfortable you are with the technology. I am sure others will add in their favorites as well. These were coupled to an external antenna pointed at the nearest (8 miles) cell tower (https://smile.amazon.com/dp/B08CRH3KGM?psc=1&ref=ppx_yo2_dt_b_product_details) since cellular signal doesn't get through these log walls very well. The MoFi uses SMA connections and the M1 uses TS9 connections, so when you get your antenna, also get some SMA to TS9 convertors if you're using an M1.
The process is to lock a band, reboot the modem, run a speedtest, then lock the next band, etc. After you've tested them all, lock on the one that gives you the fastest speeds. If you have more than one decent band, you can also set carrier aggregation. You're likely to get your fastest speeds after 11PM - no reason to fight mountains AND congestion at the same time.
I used cellmapper (https://www.cellmapper.net/map) to tell me which bands my carrier was using at my tower (I also used it to help point the antenna since it is directional). Pull up the map on cell mapper and right-click to select your carrier.
You should be able to do all this before the return window on this stuff closes, so if you just can't get a signal, you can return them and you're just out some time.
Another point is that if you go with an "unlimited data reseller" like UbiFi, they may require that you purchase a modem from them, so just be aware. UbFi will give you 30 days to test their package out (MoFi 4500 for $300 or so and one free month of their $99/month AT&T Unlimited), but they'll charge you a 15% restocking fee if you do return it. Their MoFi does have band locking accessible from the admin page, but it does not do carrier aggregation.
