Given your birth year (an easy guess in person), I know the most popular boys' and girls' names for that year. After that it's fishing. ("Does the name 'Michael' mean anything to you? Something about grade school...." And "When you were in middle school you thought about girls a lot, right? One of them was ... Ashley. Something special... I'm seeing something special....")
The Derren Brown example, you'll notice that Derren doesn't get the name right off. He runs through a bunch of sounds while watching the young lady's face, after making a pretty good guess about the target's age, and knowing common names from that period.
The last example was just pathetic. The sitter did a lot of nodding and other body-language responding while the medium made a whole pile of general vague statements.
I suggest that in addition to the Full Facts Book of Cold Reading that you read <em>13 Steps to Mentalism</em>.
Neither of those will make you an expert, not until you've been using the techniques with real audiences for years, but they'll get you to a place where you have an idea of what's possible.
