I like these ones on Amazon.
They come in A5 (smaller, $7) and B5 (regular paper size, $9) sizes. They're a bit more than some of the other options out there, but they have really thick, cream paper. They're also wirebound and have a durable plain cover, both of which are big perks for me.

I live in Colorado and a couple years ago I discovered this group Rocky Mountain Game Developers Association. There is probably something similar where you live. The last time I met with those guys (way before covid) there were several people who had never touched game development before, it's a great place to learn. Lots of groups will do things like 24 hour game jams and such, loads of fun stuff. I HIGHLY suggest finding a group like that near you, funnily enough the last team I worked with there we all had ADHD.
I have binders full of games that are 70% planned/designed. Like at least 50lbs of paper. My suggestion is to write everything down. Get yourself some notebooks (I use A5 dot grids like these, the size is great & dots don't restrict your creativity like lines).
Just write everything down. Idea - write it down. You don't need to get super organized at first. Once you have your ideas down, you can start drilling down on organization. Nice thing about writing stuff down is when you inevitably get sidetracked, you don't lose anything.
