I've made pellicle fruit leather a couple times, and it comes out delicious! So far I've done strawberry and blackberry, and both were a hit with my family.
It's a little finicky on timing in the dehydrator; sometimes it'll be over-dried, and sometimes so close to done that you keep having to put it back in. You also definitely need to get some silicone pans or sheets, otherwise good luck getting that stuff off of anything that's not entirely non-stick (and it merged into goo with wax and parchment paper too lol.)
But if you're willing to babysit it a bit, it makes a great treat that keeps nicely at room temp, and you can vary the texture and thickness to get it exactly how you like. Easy clean-up with the silicone sheets too since it peels off quite cleanly. I'm currently using these silicone pans because I like that they have a lip to keep the mixture somewhat even in height to make the drying process a little more consistent. I'm borrowing a large dehydrator from my friend, very similar to this model.
I basically just fudge the recipe and do some level of 1:1 ratio of pellicle to fruit right now and chuck both into our high-power blender and mix them together. Some recipes encourage reducing the fruit over the stove and adding some sugar, but we like our treats on the less-sweet side, so just some frozen fruit as-is worked fine for us.
