May I suggest a Dash cam-like setup? It might help in situations like these. You can shop for a bike cam that has loop recording (so you just start recording when you ride, then the cam auto records 5 min files and auto deletes the older ones when the memory is full)
Or what I did was buy this one https://www.amazon.com/dp/B07F245PS1?ref=ppx_pop_mob_ap_share and then got a mount. That cam is USB-C so I just connect it to my battery bank which is on my tube bike bag and forget about it once i start cycling. The night vision works pretty well too. There are more expensive options (like 360 cams and such) in case that feels more helpful.

It's sad that we even have to consider this stuff.. but hopefully it'll get better.

This is what I have in mine with a 128GB card and I love it

I bought mine from Amazon, & 128 GB micro sd card for it. This one has an app so you can play all the content on your phone & it just records over the oldest videos once memory is full. Decent reviews & clear camera
