You may enjoy A Wizard of Earthsea by Ursula K. Le Guin. (https://www.amazon.com/Wizard-Earthsea-Cycle/dp/0547773749) While it is not so much about monster hunting, but it spends a lot of time problem solving magical and monstrous problems.
The forgotten realms Drizzt books by R.A. Salvatore (https://www.amazon.com/Homeland-Legend-Drizzt-Book-I-ebook/dp/B002DOSBMK) also have some very cool thinking when it comes to slaying beasts.
