Elaine Pagels is a very respected scholar in the field (and on this sub) and she's written books exactly about this: Adam, Eve, and the Serpent: Sex and Politics in Early Christianity very explicitly deals with this subject, but it's also a recurring theme in her most famous work The Gnostic Gospels, where works like "The Gospel of Mary" (maybe one of the rejected ones written by women you're looking for?) are discussed.
