I’ve been waiting for someone to ask this! 😃 On one of our first trips in our new (to us) van, we had a huge tire blow out that gashed our van. It was at that time that we found out that the previous owner had put 17s on the van, but the wheel wells did not fit a 10-ply tire (which our size of van needs). We bought the van without a build, and the extra weight made the tire come apart.
Anyways, long story short, we ended up stranded in NM, outside white sands, living in the parking lot of the discount tire, trying to find solutions. Go back to smaller rims? Find a truck tire that fit and shave the faring? Ride home on inappropriately load rated tires?
We ultimately put Hanook Dynapro AT2s (LT245/70R17), which barely fit the wheel well. We shaved some of the faring off to minimize rub and rode the 800miles home. Once we got home, we got the airlift system for the back, and the topo 2.0 lift kit for the front. It lifted the entire van about 2” and gave us the clearance we needed in the wheel wells. We now feel like bad-asses on the road, and when “off-roading” down a river bank or something, have tons of clearance…

As we wanted the spare to be the same size, we kept the 16” stock rim and put a Pathfinder HSR (LT245/75R16) on it, as the circumference was the same as that of the Hanooks AND serendipitously, the largest size tire that could fit in the spare compartment under the van. Hope this helps - good luck!
