This is precisely the thing that's confusing me. Just this morning I filled the jar with the second half of a container of Ambrosia Honey Co which we bought because we thought the locally harvested honey might be too thick for the dispenser.
The factory container was in the cupboard, but not more than 3 paces from the dispenser which sits near our electric kettle, on the counter. In the last 4 or 5 months, the honey in the dispenser thickened to the point that it wouldn't come out of the dispenser but the honey in the factory container was unchanged. As far as I could tell, the honey in the dispenser wasn't crystalized, but from what others in this thread are saying, it might be crystalized but not visually apparent.
