Here is a continuous-monitoring sensor that measures pH, temperature, and total dissolved solids (TDS). It says it outputs it's data via Bluetooth Low Energy (BLE), so depending on the distance from your pool to your HA hub you might be able to pick up the signal, especially since most of the distance will be outdoors. You could always use a ESPHome ESP32 BLE relay to Wifi.
