I’ve had several and recommend this one. I had a dual-prong hub but it started having power delivery issues after a month, and I read about them potentially being the cause of some logic board failures. Just my $.02.
I use any of the 100W USB-C hubs from amazon. Check this one out, or any of the similar ones. I have an S10+ and the tab S6 and it works perfectly on both.
I also have one that is rated at 60w, and it works well, but doesnt pass enough power through to charge the phone or tablet while using. (This hub also works on my HP Spectre laptop, so it get a lot of use.

ok, you're already driving 2, LCD & HDMI... a third is going to sacrifice performance... that did you try to use on the USB-C?
when I do presentations & lecture, I use a USB-C to HDMI adapter and it works for slides and some video (my laptop doesn't have an HDMI natively), works quite well, but I wouldn't try it for gaming...

I had a hard time even finding one that came with one USB C port. I ended up going with this. Good to know that they now come with two USB C port!

I've had no issues with 2004 on my Surface Book 2. You can force it via the Update Assistant (https://www.microsoft.com/en-us/software-download/windows10) if you'd like, but, your mileage may vary especially if you haven't been offered it yet, could be conflicting software installed.
I also have an Anker USB-C hub with HDMI out (https://www.amazon.com/gp/product/B07HMLTCPL) and have had no issues using it with my Surface Book 2. Although, it looks like its been replaced with this newer model (https://www.amazon.com/dp/B07ZVKTP53)
I have a similar 7-in-1. With USB-C data (the newer version) and the USB-C is great. I use it with the apple usb-c 1/8" line out, or other USB-C things I have like the apogee jam+.
It's actually really good. Anker is solid and the feature set is great. USB-C works great, charging works great. I use it with an Anker 60W PIQ 3.0 charger and a Uni 100w PD cable.
When I got it in April there weren't enough resources on Amazon to indicate that everything would work out of the box, so I was happy to find it's a really great hub.
I also looked at the "Uni USB C Hub Ethernet 8-in-1" which I think would've also been a good choice.
I think in general, you need to make a list of the features the hub must have. Then find a brand you like that offers that feature set.

I would focus on portability and get a high-quality [X]-in-1 USB-C hub. Most USB-C hubs output 4K @ 30hz over HDMI, which is more than enough for most non-video applications. The Surface Go doesn't have a lot of horsepower, and will have a really hard time driving that many pixels that fast without taking a performance hit somewhere else. The main advantage of the surface hub is that you keep your USB-C port free, but it's not portable at all, so you'll probably want a [X]-in-1 no matter what.
I would go with this Anker 7-in-1. It's $50, has 4K@30Hz HDMI, a second USB-C port for data (so you don't lose your only USB-C port), and supports USB-C Power Delivery:
Have you looked at the HyperDrive USB-C hub for the iPad Pro? It has both a 3.5mm headphone jack and charger, and other ports like an SD card slot and HDMI
The other option could be to buy Anker’s high end 7-in-1 USB-C hub with 2 USB-C ports. One of which could be used to power the iPad and the other could be used to plug in Apples 3.5mm to USB-C adapter.
