How do you know it is only 0.1 pH off? Is this the Aspera Kit? I like a complete kit otherwise another brand I was looking at ends up costing about $120.
Apera pH20, I got mine from amazon.ca 2 years ago and it's still rock solid! This is the one I bought May 2020, this is the extended kit with proper calibration fluid and storage fluid
pH meter. Something like this. I do not recommend litmus strips or similar pH testers. They rely on color interpretation, and hot sauce contains a lot of pigments which can make that interpretation difficult.
Keep in mind, pH doesn't necessarily mean that botulinum toxin isn't present. As long as you've followed a sound process, you can be all but guaranteed botulism wasn't able to get going. pH readings are primarily used to ensure you've achieved a level low enough to prevent bacteria, including C. botulinum, from thriving once bottled and give you some reassurance especially if you're giving your sauce to someone.

(Heading to Save On Foods for 5 gallons of RO for $3.19 at a time was getting old fast...and limiting outdoor contact is something I’m really interested in at this time!)
One more thing, don’t get the shitty $25 pH pen from amazon, get the good one that Dr Coco recommends...take it from a guy that wasted the first $25 to learn this lesson! This proper one is an actual scientific device instead of a weird guessy guessy unit that the cheap one is...pH is too important to risk on guessy guessy)
I have been using Apera for over a year and really like it. Very easy to calibrate. I bought the kit and not even close to running out buffer.

This one, not something you want to be cheap about in my opinion. Bad pH can ruin an entire grow so I decided to take the quality route.
Test strips are all but useless anyway, since most hot sauces have a red, orange, brown or otherwise similar color to the strip results.
I use this setup and calibrate before each test to be safe.

I also think it's good to have pest control on hand so you can address it as soon as it happens (if it does). I own both. I would suggest buying them at home depot if shipping from amazon will take too long.

You can get a cheaper pen... but that one is VERY good quality and has all the calibration stuff you will ever need. Good luck my friend :)
