Why don't you go for a Minibrute 2S?
In my opinion is a great way to start with hardware as you'll own a desktop semi-modular system with a sequencer that can be expanded with euro rack modules using its case for under $800.
You can create a lot of different sounds and make tons of different patches.
From there you can buy eurorack modules and play around.
