If I still had a VCR, I could record it with my capture card, but I'd have to go thrifting for a while to find a good enough one.
Alternatively, you can probably pick up a cheap svideo usb capture card (others are available) and record it (using OBS, throw that OEM software in the trash) from your own VCR.
They convert the analogue signal coming from the video camera into a digital signal that a computer can capture. Kind of like an audio interface does for audio - converts analogue mic signals into digital signals.
There are plenty of options, the cheapest being a composite-USB capture dongle like this one on Amazon but there are plenty out there, and they’re cheap.

Le plus difficile était de trouver un magnétoscope qui marche bien--j'ai pu en emprunter un- sinon le seul matos acheté c'était ce convertisseur à 30 euros. A condition que tu trouves un lecteur (caméra ou magnéto) avec une prise RCA (jaune rouge noir) ça devrait marcher.
C'était un peu long mais si je l'avais fait faire, ça aurait coûté entre 400 et 600 euros donc ça vaut le coup

It is an rca to usb video capture device, just play the tape and use the usb capture feature in premiere or whatever video editing software you happen to use. It will treat the vhs input like you have a DV camera plugged in except it wont let you control playback frm within premiere like with a DV camera. At $20 you can't go wrong.

The video is just playing on the camera viewfinder screen.
For the PS2 / Gamecube, for cheapness you could use possibly a cheap USB TV catprue card?
I would assume it comes with its own preview windows that you can then capture via OBS / Xsplit.

You camcorder has S Video out, the basic steps are get a USB S Video capture device and a cable that connects them depending on if it's male/female on your camera. Then you can use some video capture software to make a digital file, by playing the video into the capture card. It will capture in realtime. You can then use editing software to compress/trim the video.
