Most are not set up that way.
You know what I would do - I would create a customized playlist of these types of music - get ideas from people on the internet - I think the time and effort you put into creating something like that would be a great gift.
I know it's not as tangible as a course but maybe you could just collect some other information.
Like, for example, maybe buy him a book on non-western instruments. Something like this: https://www.amazon.com/Balinese-Gamelan-Music-Downloadable-Included-ebook/dp/B00G8O70PK
Which also has downloadable musical examples.
And if you really wanted to go ham on it, you could make a play list that could be listened to along with the book, or each book, and so on, so it's this whole experience you've created for them.
This way he can learn about the culture, the music, maybe the books will go into how they're written or how the instrument is played or typically used, and then he can hear them in action as well.
I would totally geek out on something like that.
Everything else - any course - I'm afraid is either going to be way too broad, or way too specific.
