Don't let anyone tell you that canning is hard! It's not like you need to have a completely sterile environment. Just wipe down your stove top and your counters with some kind of sanitizer, and make sure all of your equipment and jars are clean. The jars are sterilized first in boiling water, and so are the lids. The contents are then put into the jar, and returned to the water bath to be "processed."
It doesn't need to be crazy clean, it's not like you're performing surgery. You just have to take a few extra precautions. You just need a $10-15 set like this, and a big pot. The jars come in pack of 12 for around $8.
> Suggestions on how to can or preserve?
When it comes to canning, the USDA canning guide is the first palce you should look.
> An average of 17-1/2 pounds is needed per canner load of 7 quarts; an average of 11 pounds is needed per canner load of 9 pints.
...and you can safely do them in a simple boiling water canner. You can get a small one for about $20. Since you brew beer, you've probably got a sufficiently large pot already - all you need is a rack to keep the jars off the bottom.
If you don't have one already, I'd suggest getting a jar lifter & a mason-jar-sized funnel. They can be found pretty cheap.
