If the smell comes out its because the jar is not air tight. That's how smells get out.
I would recommend you get a hermetically sealing jar, they are pretty cheap on amazon - I get these italian glass hermetic jars.

You should be fine if you crack the seal once a day for the first couple days. At my old work (a college) place my supervisor gave our VP a jar of fresh roasted beans. She forgot them on her desk over Christmas break, and came back to an broken jar and beans all over the place! I regularly store beans I use in a standard mason jar, but beans that I might not touch as often (decaf) I store in one of these: jar. no evidence at all to support this but I think that this allows a pressure to escape as needed (but that could also be that the jar is like 7 years old and the seal isn't as good as it used to be).
I've bought some of these. They're pretty good.
