This is a gorgeous bread book, although I’ll be honest I haven’t tried any of the breads yet, just the pizza crust. The thin crust pizza was good.

Not sure about video series... But I bought this cookbook and found it to be very helpful. I had some experience but not much. This book has helped make bread making seem like something I can do! They have pictures for each step and talk about troubleshooting issues and even go into the science of bread at the beginning a bit. book on amazon

I had good luck making supple whole wheat loaves with honey, as in a honey wheat loaf. As a bonus, my anecdotal experience was that the honey wheat loaves stayed fresher longer, even at room temperature, than any other loaves I made.
The loaves were not as soft as store bought wheat bread because they had a more rustic crust, but the interior crumb was pleasantly soft.
For an all around soft loaf, consider a Pullman pan which bakes a loaf similar to store bought.
And for recipes, I've been pleased with America's Test Kitchen's recipes. I checked it out from my local library, natch.
