Dining rooms aside, I feel ya on the making a mess part. I'm not too far, but some times I just want to eat it hot.

There's some work that needs to be done. Biggest issues with this car setup is the chair, it's just not the right position to be working 8 hours straight. It's kind of slouchy. The steering wheel desk is just this plastic flimsy thing and I hate that - it wobbles and I need to put some wrist weight on it. It's definitely stable, but weak.
I would try out some other steering wheel desks on Amazon, but I wish there was a nice high quality one that was firm and maybe even rested on the door on the left and the center console on the right. For now tho it seems something like that would have to be custom built and I'm looking for something easier than that.
Monitors are great, positioning them is tricky. I might experiment with using a suction cup holder on the windshield or less likely the driver window

It works but I'm not super happy with it. It feels weak - it is firm where it's grabbing the wheel but it leans when you put weight on the end that's close to you. They make these with straps or hooks that kinda look shitty but also maybe look better than what I have. I'll try that eventually. I just wish it was flatter and more sturdy.
