Ceiling or wall is largely personal preference. If the wall has insulation, ceiling may be easier. Either way, cut a hole and use an old work low voltage box and use a wireport faceplate, don't just leave the hole bare. This way, it's easy to put a cover faceplate over it down the road if you move out or decide to move things.
Based on your description, I would lean towards a small wall mount rack. That would allow you to properly mount the patch panel, switch and have an area to stack your MyCloud and NUC.
