Read the Gospels and read the Catechism of the Catholic Church. That is the where the answers live. Whenever I have any question about my faith, I look to those two sources. I sincerely believe that we need more Catechism study groups across parishes to help us understand and speak intelligently even among ourselves. Pope Benedict's contribution in this deposit of faith is astounding, as I literally every day find the answer to a question I have myself or from someone else about the Church.
For me personally, reading the Word on Fire Bible and all of the commentaries within proved very illuminating. I had never read the Gospels with such guidance. I've been considering getting the Ignatius Study Bible or Navarre Bible to help me understand further.
The Catechism helps with interpretation and understanding of all things Catholic from the very concept of faith, to the Mass, to the Sacraments, to the Creed, to the virtues, angels, saints - all of this and more.
These two books stay on my desk at all times. What I really enjoy about the Catechism is that I know I can never likely read all of the writings of the Church Fathers or the many Encyclicals or the latest awesome book from Scott Hahn or Peter Kreeft or Bishop Barron, but...I can read the Catechism and the Gospels.
Here it is on Amazon, though it is better to support your local Catholic bookstore if you have one in your community. This is the one that the Compendium references and the next place you should look on deeper questions. You can in turn follow the Catechism’s footnotes to primary sources.
The best place to learn about Catholic beliefs is to read the Catechism of the Catholic Church.

If you, like me, prefer to read a hard-copy here is a paperback version.
There's always one of the Catechisms (the new one, or the Baltimore Catechism, or one of the others). Depending on your existing familiarity with doctrine, and just how deep you want to get into things, there's also Fundamentals of Catholic Dogma, which will reference a compendium of Church documents commonly referred to as Denzinger.
The USCCB has the current Catechism online. Fundamentals can be found in PDF, as well.

Before you read the Bible, I would recommend you first read the Catechism of the Catholic Church, online or hardcopy, or some other Church-approved catechism or attend catechism classes or RCIA (Rite of Christian Initiation for Adults) classes at your local Catholic parish to get a solid understanding of Catholicism because most, if not all, of the books of the Bible's New Testament section were written for people who were already familiar with the Christian (Catholic) faith. If you read the books of the Bible without a familiarity with the Catholic faith, then you risk seriously misunderstanding it, as the Bible itself warns, "There are some things in them hard to understand, which the ignorant and unstable twist to their own destruction." (2 Peter 3:16)
"Catechism of the Catholic Church" by the Vatican (also found here online free).
"Introduction to Christianity" by Joseph Cardinal Ratzinger.
"Exposition of the Orthodox Faith" by St. John of Damascus.
These are three good sources for it. God bless!

Welcome to the Church! A couple of thoughts for you:
Catholics aren't Sola Scriptura; that is, we don't only have the Bible as our guide. We also have the tradition of the Church to fall back on, and the teachings of the founding fathers. The Catholic Church precedes the Bible; in fact we wrote it.
If anyone actually wants to know why the Catholic Church is the way it is, it's all written down in the Catechism: https://www.amazon.com/Catechism-Catholic-Libreria-Editrice-Vaticana/dp/1601376499/ref=sr_1_1?crid=GJH2W433PMO3&dchild=1&keywords=catechism+of+the+catholic+church&qid=1618467267&sprefix=catechism+of+the+catholi%2Caps%2C1082&sr=8-1
I heartily recommend it! God bless.
