Ooooh I love organizing and other things so let me see what I've got!
-containers like these for dry/bulk foods, they look SO satisfying, you always know how much you have, and you don't have flour spilling out on your shelf or what have you
-sticking photos up (with that sticky play-dough like stuff) of family members, friends, or good memories in your bathroom/office/whatever so you can see them regularly and spark a bit of positivity when you walk by
-painting a stained-glass pattern on your window with watercolor paints, it's cute in the sun, you feel like you're "breaking rules" by painting on a window, and it washes off super easily and brightens things up in the blah winter time
-hue lights. enough said lol
-buying fresh flowers often! Trader Joe's is my go-to because they're cheap but last so much longer than other places
-paint is a universal refresher. that, and new duvet covers--both can entirely change a room

My 2c-
First, the cabinet facing. That old stained wood has to go. The cabinet doors themselves look like they're in decent shape though. If you are willing to put in some sweat, pull the doors, throw out all the hinges and hardware, sand everything, paint it some nice color, then remount with new hardware and soft-close hinges. Takes a long time especially for cabinet interiors but it will save you a bundle vs. getting new cabinetry.
As others have said, consider dumping the hanging cabinets above the island. Personally I wouldn't- you can never have too much storage. But I would give them glass doors on both sides, or glass doors on the kitchen side with glass on the back side. That will open a sight line through the cabinet and make the space feel more airy. However if you do this, you run the risk of making the place look cluttered by the items stored in that cabinet. So that would be a good place for some attractive transparent ingredient containers or the better tableware that is in matched stacks and doesn't look like crap.
I would add a cabinet at the end where the end of the island is- exposed trash can isn't the prettiest thing in the world. Give that a cabinet and a pull out trash can.
Countertop and backsplash- I dunno who thought light tile with black grout was a good idea but it's not a good idea. That should all go in the dumpster. Get a nice stone or synthetic. Pick out a new tile for the backsplash, something light colored and airy. I'd do a stainless steel sink as well to match the appliances.
While you're at it, put under-cabinet LED lighting on all cabinets. You can never have too much light. Match the color temperature for whatever the counter surface is. I suggest around 3000K-3500K will be the right range. And make sure you have good CRI (90+ is ideal), so you don't get a situation where items are a different color under your countertop light than in sunlight.
Dark appliances- dump them. They may work but the dark color makes the whole kitchen dark. Go with stainless steel for a nice modern look. I would redo the area above the stove, get a cabinet-mount above-stove microwave. That combines the vent hood/light and microwave into one unit, freeing up counter space by the fridge.
While you're at it, redo the ceiling. A fresh white ceiling paint and a new light fixture can make a surprising psychological difference. I'd remove the big fluorescent and put recessed LED down lights in several places around the room- that way when you stand at the counter your body isn't creating a shadow from the only light in the room, and some of the ceiling light will hit the counter.
Some fresh paint would also help the rest of the room. The door frame and light switch are looking a bit ratty. Replace that switch with a Decora rocker and a screwless wall plate for a nice clean look.
