Well, if we’re building out a new training facility the trainer gets a wireless mic and and an processor that can “duck” the music automatically whenever they speak. This works really well for gloved hands and there is a wide range of adjustments to suite just about any application.
For your specific application you might look at “Chubby Buttons” made for motocross and winter sports. I dunno if it would work well with your style gloves though.

Which one do you have?
I got the Chubby Buttons 2, the Satechi media remote and R2, and the Tunai Button. The latter 2 don't work for some reason with the 6 Pro, they pair but don't connect. They do work with the Pixel 4XL on Android 12. I don't know if it's Android 13 or the 6 Pro's BT stack or hardware.
I now see there's a cheap clone of the CB2, I might buy it to keep in the shower, though don't know if it will work with the 6 Pro.
I'm not sure how deep you wanna to into this DIY-wise, but there are OS's for the Raspberry Pi for this purpose like Crankshaft, which itself appears to be a fork of OpenAuto, they have a subreddit: https://www.reddit.com/r/crankshaft/
If you are OK with using just an Android tablet, you can use HeadUnit Reloaded, though you might find it difficult or impossible to operate it without having to touch the screen.
Backing up a bit, if your problem is only that you need to control media and calls with gloves on, there are remotes like the Chubby Buttons, though that one is kind of expensive for what it is, but it's also kinda unique in its size. The previous version which was not too different was $50. There are also gloves with fingertips for capacitive screens so you don't have to take them off to operate your phone.
