Lol this is awesome. I use a regular giant coleman cabin tent and blow up air mattresses to sleep on. Plenty of room for both of us and all of our stuff. Don't even have a topper, just a hard tonneau.

you get something with plenty of space that will go up quick and has dividers inside for separation when you want!
Now that particular link you don't want to use, amazon is charging a shit load for that tent- I ordered one as a wedding present for ~$240 a few months ago so try to find it for closer to that. If you have Costco, they carry a CORE tent that is the same style. I have never used a CORE tent myself and can't speak for them to same as I can for the coleman cabins, but if it ends up being crap costco will take it back so it's at least lowrisk!
While it's not the same situation I lived out of a Colman instant max 8 man cabin tent for a month working with boy scouts building a campground. Was extremely spacious for me and my dad, we had two cots, storage for clothes and tools. It even has a divider with a door for each room. We got it in 2006 and I still have it today, used it last weekend on a overland trip. This looks like the newest version of it:
