The Coleman Sundome is a really good car camping tent. It may not be the easiest to set up, however.

I've used a version of this tent for over a decade. Perfect for car camping, and if it's just the two of you, you can definitely fit a cot in for the girlfriend.

My go to set up is a
Canopy ($50 from walmart, but more expensive ones will probably last longer)
Tent (4 person tent works for me, I bought this one on Amazon when it was on sale for $50 IIRC)
Air bed (standard queen air mattress, but set up your tent a few days before the festival to make sure the air mattress will fit inside the tent)
Bedding, blankets, pillows: Put this stuff in your car after you wake up each morning (or in a Ziploc. I use a large vacuum bag). If the nighttime temperatures drop too much the temperature deviation will cause condensation to form on everything in your tent.. aka your blankets will be wet when you come back to sleep.
Aside from that, some LED lights (I have a flashlight and headlamp) for walking and some LED lighting for your campsite. The guy next to me hung up 10 or so of these LED Camping Lights on the horizontal bars of his canopy, and it was great for chilling at the campsite at night
I have a ENO Hammock as well as the Air Hammock. The latter is what I slept on alot during Okee. I put my phone and everything in the car and just had my keys in my pocket. With a a pillow and heavy blanket I slept maybe 2 nights and several naps like that

Can't go wrong with a cheap Coleman tent. I wouldn't trust tents on Amazon with like 13 reviews. Most of those are likely fake.
Not on Amazon, but I bought this Target store brand 2-person tent on clearance a few years ago and it's still holding up pretty well, considering the price.

It’s a Coleman SunDome 4 person. This cheap little tent kept us dry and cozy in snow and rainstorms. Highly recommend!

I've heard of the brand but haven't really heard of anyone owning one or know of any good reviews.
The sleeping bag is a 20F with synthetic fill, and at 3.5lbs it's a pretty heavy bag. Most people wouldn't need a 20F bag unless they're camping in sub-freezing temps, it's a lot to carry if you're only going out in fair weather.
The tent is a 5 person tent. It's a very cheap tent, you can tell by the fiberglass poles. Fiberglass poles are connected by a steel ferrule which connects each section. The poles go through sleeves at the top of the tent... and the ferrules catch on everything and make it annoying to push the poles through. Better tents have aluminum poles which are easier to push through, as well as being lighter. The tent doesn't have a full coverage fly; that means if it's raining you have to zip up all the windows and then it can become really stuffy inside. Without a vestibule, the inside can get wet if when you enter/exit, and it can allow bugs to get in.
You can get a similar tent like the Coleman Sundome 4 for $85 on sale at Amazon. A Coleman 30F synthetic bag goes for $30. So for a similar price you get a tent that's slightly smaller and a sleeping bag that's not quite as warm. So it's a decent deal if you're going camping in late fall and always run cold... but if you're just doing summer camping it's just an OK deal.
I would recommend spending more on a decent tent with aluminum poles and a full coverage fly, but that tent might be fine. Assuming it's in good condition.
I'd focus on the festival / car camping style tent first.
Then if you need one for backpacking later - get one specific for that job. Since ultralight tents aren't great for festivals (less room, more delicate fabrics, expensive, etc.).

Do you have a budget?
Low price, but still reasonable quality would be something like the Coleman Sundome 4 @ $65. Basic tent.
Mid-price would be something like the REI Camp Dome 4 @ $200. Similar design to the Coleman, but better materials and warranty.
Higher end would be something like the REI Kingdome 4 @ $400. You can stand up in it, lots of room. Durable and all around bomber tent.

Sure, $250 is reasonable. You may not get top-of-the-line for this, but definitely something that works.
REI.com is a great place to start. They sell quality brands, including their own.
Their Kingdom 6 is well over your budget, but a high quality option that I recommend. It will keep your family happy in a wide variety of conditions. Check it out, if nothing else - as a reference point for something that's good.
EDIT:
Instead of looking for an 8-man tent (which will be big and expensive) - consider 2 4-man tents. Much more common, and way cheaper.
You could get two of these and split the family up - if that works for your situation.
They are popular and quality enough for car camping. They won't last forever, but really no tent is going to.
