Drink all the water, dress light, and wear a good hat.
I usually go out in basketball shorts and a loose, breathable, T-shirt.

Ball caps are well and good, but they don't provide your head/neck/shoulders with as much protection from the sun as you need.
About the same as 13igTyme:
- UPF Bucket style hat
- UPF long sleeve shirt with built in hood/gaiter
- UPF full length gloves (ones that go further then your wrist)
- Lightweight quick drying pants.
- Shoes depend on the temp but I use NRS neoprene boots for spring/fall and some cheap water shoes during the summer that are light weight for really hot days.
- Sunglasses that are polarized.
I wear my NRS life vest all the time. Can be a little warm but safter first. Been debating on trying an inflating style vest for more of a cooler setup.
I might look goofy in all of this on a hot summer day but even in 100 degree days I'm covered head to toe in UPF gear. I actually find that it helps keep the temps down vs wearing short sleeve shirts/shorts. The sun is no longer beating down directly on my skin and I'm not covered in sun tan lotion which I feel just helps trap heat in my body more. If I find myself getting a little hot I'll just dunk my hands into the water and splash myself a bit and the wet UPF gear will feel cool. I'm in the Midwest so not sure how that all applies in Salt water.
I really like the shirt I linked above. It has the built in gaitor and hood. I use to use a separate gaitor but found that in the hotter summer days that thing would get dirty/stink on each trip and didn't want to have to buy multiple ones to swap out each trip. bought about 4-5 of these shirts and I'm good.
