This is what I bought and replaced all the strips that came with the sensors. Haven't had one fall off the wall yet. (Unless you count my cat figuring out how to climb the door frame and knock it off.)
It's basically velcro. Use 2 strips, one on wall, one on back of sensor. Push them together and they lock in.

I used these for mine, what's nice about them I think is that if it's a bigger piece you can just stick more on to the back. I mean I haven't tried to do that yet but that's how they're advertised lol.

Yes it sticks to the eero. Command strips are known for being gentle. I could care less about the eero plastic though. I use them because they don’t damage the wall!!
Just keep in mind you need 6 per panel. 3 on panel, 3 on wall.

I highly recommend the Command Small Picture Hanging Strips much easier to remove then ones that stick directly to the wall.
I just put up a glass tile backsplash in my kitchen and didn't want to drill through it and risk damage. I used 3M removable velcro to mount a magnetic kitchen knife holder. For your application, search 3M hooks on Amazon and use something like this.

The instructions for the remote sensor suggest placing it on a wall, at a height of about 5 feet off the ground. I assume that's to prevent it from reading an inaccurate temp too high near the ceiling or too close to the floor. At the same time it should be located away from heating/cooling sources and vents, etc. Basically mount it where the temperature reading would not be affected by something like drafts, direct sunlight, etc.
You will need to be able to remove the sensor when it needs a battery change so be sure it's relatively easy to access. My solution was to mount it using Command mounting strips that are like velcro/hook & loop adhesives. I just cut the side that goes on the back on the sensor small enough that it's just on the battery compartment door. The main purpose of the remote sensor is to give feedback to the main hub for areas you'd like to factor into the temperature control. You can set it up so the only certain sensors are used during certain modes or times (for example: in my house it's set to only use the temp from 2 specific bedrooms to control the thermostat at overnight when we sleep) or to use the room's occupancy as a factor.
That being the case you only need to put a sensor in rooms that you want the temperature "controlled". If you are in a different room then it makes sense that the sensor won't register as it being "occupied". It will only do so when it detects motion in front of it. If you are in the office often and want the temperature in there to factor in to the overall temperature regulation then place a sensor in there. The hallway would probably not be a good idea as you walking through it will register it as being occupied and it will use the hallway temp for feedback to the main thermostat.
As far as the main thermostat being in an unoccupied area, refer again to the above. Remote sensors help with the overall temperature regulation in areas that matter to you so they seem like the best way for you to get the most out of your thermostat.

I bought these and replaced most of the strips that came with the sensors.
I haven't had anything fall off since switching to those.

Consider different sizes and cutting if can optimize the pieces. It might droop a little between the strips but shouldn't damage your ceiling.

Either small or medium should work fine, just get whichever are cheaper! I ended up getting this huge box:
But with nine, using 3 on each panel (the other ones stick to the wall), you really only need 27 pairs (for now -- you're gonna want to upgrade, trust me, heh). Looks like the best deal right now is $12 for two of the 18-pair sets from Amazon, and you'll have some to spare in case you end up moving them, getting more, etc.
I still need to set mine up -- be sure to post pictures of what you decide on!
