There are no eco/health benefits to *.pan vs. Teflon. If you think that Teflon is bad for your health in some way, you need to educate yourself on this topic and stop reading foodbabe/Dr. Oz website and/or listening to your Aunt Tilly.

I have no knowledge of ceramic or other new fangled non-stick pans, but if you want a legit no messing around BIFL Teflon pan, look for the Teflon Professional or Platinum lines or better. If you want a BIFL pan, stop looking at name brands and avail yourself to the COATING NAME. https://www.chemours.com/Teflon/en_US/products/cookware_coatings/index.html lists the best coatings and you should aim for Platinum or Platinum Plus coatings. Amazon and IKEA both sell cookwear with this coating at around the ~$40 or less price point. Some places will replace the word Platinum with Professional.

You can use metal on high quality non-stick coating pans but you have to CAREFULLY buy them. For Teflon branded coatings (not the maker of the pan, the coating) you want to buy a Platinum/Platinum Plus/Professional version of the coating. Examples:

Your first course of action is to FORGET brands. Brands mean fuck-all in non-stick cookware. Know this. Embrace this.

Step zero is research and you can do so via the Chemours website. This is the new name for DuPont. You want to get a pan with the Platinum or Platinum Plus (also referred to as Platinum Pro) coating. The key to long non-stick like is the COATING. Platinum or Platinum Plus/Pro. Get a pan with this coating and you will be happy. Two quick source for you if lazy:

As a personal aside, T-fal has a proprietary coating which works 9/10 as good as the super high end DuPont Platinum line and you can get those pans at Walmart for like 10 bucks.
