I would buy a small slow cooker and make stuff in that.

Other than that learn to steam vegetables in your microwave. (Also how to cook/steam plain rice in the microwave since big packets of rice are ten times cheaper than some microwave pouch).
If you're cutting, which it sounds like you are, chicken + veg + rice is an easy starting point.

There's an amazon 3-quart 20$ crockpot I've used for five years ([link]). You can turn it on with some kind of meat and vegetables and sauce and leave it for 4 or 8 hours depending on slow or "fast" cook, and come back to a meal you can eat or divide into portions and freeze for later. They also make these plastic crockpot bags that you can literally put into the crockpot and cook your food in, and you won't have to clean the crock pot afterward.

We had a huge crockpot, but it ended up making too much food so the food always went to waste. I got this one instead [link] and it's great because it'll make enough food for the two of us then we have leftovers for another meal. Beef stew is so easy to make as well. Just brown some stew meat with garlic and other spices, toss it in the crockpot with carrots, onions, worcestershire and it's good to go the next morning.
