The whole point is not making things complicated.
A slow cooker is a great way to start.
Youtube is a great resource for learning to cook. There's a Jamie Oliver book called "Ministry of Food" which is gold if you're a beginner, but it's hard to find.
Also, make sure you have good tools. A good knife and cutting board, a good pan and some pots, a few casserole dishes, graters, etc...
Cooking with bad tools is a frustrating experience, but it's a pleasure with good tools.

I use a 7qt even though i live alone. If I'm gonna cook, I'm gonna cook big. Then, into the freezer.
I've always got something good to throw in the microwave at lunch time.
Easy microwave baked potato:
1 baking-size potato
olive oil
salt
pepper
Scrub the spud under running water and pat dry. Rub olive oil onto the skin. Salt and pepper the skin. Wrap in a paper towel and run the package under a faucet.
Put in a microwave for three to four minutes. Flip spud, and run microwave for another three to four minutes. Take it out and let sit for five minutes as the heat inside the potato will finish off the cooking process. Serve as you like it: butter, sour cream, chili, whatever.
Also, too: crock pot cooking is basically set it and forget it. Pot roast, pork shoulder, chili, even brisket. Fairly cheap on Amazon and can be downscaled if you're just cooking for one. My 6-quart cooker gets regular use twice a month, and one session can last me for almost a week's worth of leftovers.

I have a basic 6 qt and usually only fill it part way. I think I paid around $10. But Amazon Warehouse has them for $16 like new right now.
