Well, your not gonna like this, but I see a lot of problems with your diet.
Basically, the peanut butter, soy, tofu, naked protein drink(soy, whey), and hummus are all contributing to your problems.
With a 6$/day budget it won't be easy, but here is what I recommend:

I didn't really search so their are probably cheaper options but with this product you can get 600 calories/day from the honey.
I would spend the rest of your money on potatoes, white rice, coffee and 6 eggs/week cooked in butter. Don't forget salt as well. Heavily salt of your food as hypoglycemia usually goes hand in hand with a sodium deficiency. Taste buds are the best way to determine your sodium needs which are going to fluctuate 24/7 based on your fluid intake/loss, stress levels, and other factors. Food should taste pleasantly salty and if you cant taste salt then you didn't add enough.
You probably need significantly more than 1200 calories/day. I would aim for a minimum of 2000 and try to work up to 2500 or more calories which should be easier with a higher quality diet. When the diet is toxic usually satiety increases and appetite decreases and I think this is partly what has happened here.
Honey is one of the best foods for stabilizing blood sugar because the fructose refills liver glycogen better than other forms of carbohydrate, and is protective of the liver. Try to spread out honey consumption frequently throughout the day and consume it alongside all starches you eat to prevent a crash after eating starch. The diet I outlined above will meet all nutrient requirements and if enough calories are consumed should heal liver function so that more glycogen can be stored and blood sugar/energy becomes more stable. Coffee is one of the best foods for improving liver function so this is something I would try to consume as much as possible and as frequently as you can. If you get a stress response from coffee you just need to further increase caloric consumption. Coffee should always be consumed alongside carbohydrate until blood sugar is more stable.
If you end up with more money I would spend it on low fat greek yogurt for more protein and minerals which could replace some of the rice, but it might be too expensive to include at 6$/day as you don't get nearly as many calories/$ as you would with white rice or potatoes.
