I'm using stock but from what I've read the only limitation on ram is your cpu. Some cpu are limited on the ram speed. It'll still work but will get throttled to your limitation.
There's cheaper and I imagine crucial has higher speed ram but this has good reviews.

The memory kit is wrong. You need 260Pin SO-DIMM DDR4 modules like https://www.amazon.com/gp/product/B08C4VKYFG. 16GB can be fine too. Don't try to be fancy with it. Get the most blend and generic memory modules you can find. You don't need RGB or overclocking on this. SSD and NUC is fine.

As for ssd your only option is going to be a (m.2) of which any will work you just have to choose the size.
It's all just plug and play, unscrew your bottom plate, pry it off carefully and you're off to the races.
Someone posted about having a similar issue. They changed brands and it did the trick.
I went with Crucial.
When running the game, open task manager and take a screenshot of what the performance tab - that would give us an idea of whats bottlenecking the system.
RAM is a cheap upgrade on these laptops, and easy as well. Take your time and be careful. You'll want something like this:

I'm a little confused with how many GB their default ram has.
Would I likely want to buy two 16GBs of DDR4 and remove the default ram so they don't have timing that messes with each other or something?

Hi there. Having done my research after you answered my query (thank you for that, by the way), I took some time to find the cheapest possible RAM upgrade and found that Amazon is currently selling a single 16GB RAM stick for 19% less than the standard RRP. I’ve looked and there are no other compatible RAM sticks that would be less. This is the best price on the internet. I had a brief look at M.2 drives but didn’t waste too much time as it’s less essential and is also much more expensive for the storage I’d want. I checked what 70% of £71 was and the cost of the RAM stick is less than that. As it’s on Amazon, it would be nice and safe to organise because I could put it on a public wish list and set it so that my address is private.
Now that I’ve covered my research, I’d like to explain why I’d like the RAM (which I’ll put a link to at the bottom). I love gaming, as nearly everyone in this subreddit does. I love it so much that I went to the effort of convincing my school to let me spend my bursary (the reason for having a bursary will not be mentioned unless specifically asked to reduce the risk of accidentally putting a sob story) on a gaming laptop. At the time 8 GB of RAM was enough for most things. However, as time has gone on, the RAM is now a major bottleneck to the point that my laptop runs slowly with just a couple of tabs open for research and Microsoft teams open for college. Even if I close those now I still have to run my favourite game (Assassin’s Creed Odyssey, along with the rest of the series) on the lowest possible graphics settings and still get less than 30 frames, to the point that it’s visibly slow enough to stop and start for a split second. While my GPU is now nearly obsolete, it should be able to run better than it is. I did a performance check and the RAM is at 95+% utilisation while gaming. I’ve made certain to kill all unnecessary programs before gaming and have checked for malware – it’s definitely the RAM. Another reason the RAM is bottlenecking is that my 8GB is in dual-channel of 4 GB, which would be fine at higher memory capacities, but is a detriment at that level.
I’m hoping to be gifted the RAM below, which costs £42.99 at the time of this comment being posted and is 16GB and the same speed as my current RAM. I’ve checked it’s compatible and I am confident it will be. I’ve practised replacing the RAM in my laptop while cleaning dust out, so I know how to do it / that it’s possible.

I'm looking to upgrade my laptop RAM.
I am wondering if the RAM below is compatible with my motherboard. Also should I get the 8 gb or 16 gb. I searched on crucial and it wasn't listed and I'm not sure if that means it won't work or not all models that are compatible are certain to work.
