I really liked Culinary Tea - it's a fancy tea cookbook. I have 2 other tea books and 5 other tea cookbooks and Culinary tea is my fav because pretty food.
I have a lot of books with a few tea recipes, and a couple with a lot. The best of the bunch is "Culinary Tea" by Cynthia Gold and Lise Stern. I know you meant more recipes of tea blends rather than cooking recipes with tea, but Culinary Tea has a bunch of tea beverage recipes too.
This is not limited to cakes but I thought I would share.... This book is all about cooking with tea. Keep in mind some of the recipes are a little bit difficult and you'll have to buy some specialty tea if you don't already own it. http://www.amazon.com/Culinary-Tea-Recipes-Steeped-Tradition/dp/0762437731?tag=duckduckgo-d-20
I've done green tea and rice http://oolongowl.com/green-tea-leaf-rice-recipe/
And a fellow blogger who I love mostly does cooking with tea http://thirstyfortea.com/
There is also a book, Culinary Tea http://www.amazon.com/Culinary-Tea-Recipes-Steeped-Tradition/dp/0762437731 many recipes use black teas. Lapsang Souchong is a popular choice in cooking.
There is so much you can cook with tea! There was a post a little while back asking a similar question specifically relating to earl grey and I'll reiterate a few that I said there: cookies, ice cream, truffles; rubs, glazes, roasted pork or chicken. There are a lot of good tea recipe books out there including Culinary Tea, the Tea Cookbook, and Cooking with Tea.
