I've been growing sprouts with this for about ten months now with no issues. I eat them daily, but never expected to "feel" a difference or improvement.
Yes!! I got them online on Amazon. It came in a seed sprouting kit so now I have 4 trays of alfalfa sprouts! Didn’t know what I was doing at first so I accidentally made too many. Next time I will definitely be rotating my crop so that I don’t have to eat them all at once.

I water them once in the morning and once and night and in about a week it has made really delicious sprouts! I also bought another seed variety pack with mung beans and broccoli sprouts so I will be trying them next :)

Haha! Well, I would still guess that he's some kind of NA desert tortoise, but I couldn't tell you which one. Desert tortoises thrive on basically grass and weeds, and cactus pads as a treat. You can try hay or hay pellets (not alfalfa, but Timothy, orchard, or Bermuda are good), although my tortoise (a leopard, a type of desert tortoise from Africa, not NA like yours but similar diet) won't even look at hay or pellets. His diet is literally mainly dandelions that I pick from the yard, grass weeds, and other weeds in our yard, with an occasional salad mix or vegetables like zucchini or squash.
You can also try growing fresh wheat or oat grass, ours loves that. If you need to grow it inside, you can try growing it in batches in something like this in a windowsill, we get wheat berry seeds from WinCo. Idk how often you feed strawberries or other fruits, but I would reduce to very limited treats, maybe a few times a month. I don't think shell waxing is really a thing anymore, but honestly yours looks really good for being cared for a decade without you having looked up the "proper" care, so good job whatever you're doing. Continue with the soaks and outside time, and maybe make a little diet adjustment for long term health, but good work so far.
We grow some wheat grass sprouts for our leopard, he really prefers fresh grass and refuses to eat. You can buy by the ounce from the bulk bins at a grocery store like WinCo (labeled red or white wheat berries), and it's way cheaper than ordering them online.
Before we moved him outside full time, we grew them in a sprouts container like this, and you can successively sow the seeds so that there's a batch ready every few days when he's done eating the previous round:

It really saves a lot of space and cleaner/easier than growing in a pot of dirt indoors. I wouldn't recommend feeding the included alfalfa seeds (alfalfa isn't good for them), but we've also grown barley and oat grass which is good.
It's awesome and super easy! I use the Kitchen Crop, but Anthony recommends a few different types on his website. I'm growing alfalfa right now.
Also, since you mentioned barley grass, just remember that Anthony recommends barley grass juice powder.
I have a sprouter like this one, so I just pour in the hydrogen peroxide, and it makes its way down tray by tray until it collects in the bottom pan. So it's mostly flooding the roots and then draining, and not so much covering the tops.

It’s incredibly simple, and takes very little water. They don’t even need light, and it takes about 9 days for most seeds. You can even do it in a mason jar, but I liked the stacked system. I bought a variety of sprouting seeds (mung bean, alfalfa, broccoli... etc) on Amazon. Lots of instructional videos about sprouting on YouTube.

Actually I have two of them. It comes with directions, but basically you just pour a cup or two of water in the top tray a couple of times a day, keep them wet and rinsed, and viola! 3 days later you've got sprouts! I start one tray MOnday, one Tuesday, one Wednesday, etc. so they are staggered and I have sprouts for every day.
I like the above trays, but if I could find a similar set up with metal trays, I would use that. Sprouts have the potential of growing gnarly bacteria, and I wash my trays with bleach between sprouting sessions. If they were metal I think I could get away with just pouring boiling water over them, and I think that would be more environmentally friendly, and more healthy, than using bleach.
Do be very careful about bacteria - I've never gotten sick from sprouts, but my brother (who lives in a house) has, and he said it was really bad.
microgreens and sprouts would be great. sprouts don't need any light. you can buy a little tower for them like this. microgreens don't need much light--just enough to green up for a few days. my favorite are black oil sunflower. they make great salads. there are a lot of guides online to get started. space wise you just need a shelf to put a tray (or more if you want). i use 1020 trays, but you can do whatever size works for you. 2 weeks and you have salad!
I love my 4-Tray Seed Sprouter by VICTORIO . (I recommend the newer version over the older one because of the new watering lid, which prevents the seeds in the top tray from moving around while watering)
