Hi Cloudeen,
Thank you for your interest. I'm sending a few full set to Amazon. The item is not available yet. I'm still working on the improvement of the sleeves based on other people's feedback. The following amazon link will be my listing. I'm not sure if I price it currently. I'm selling them at 24.99 for 2000 sleeves with 1000 for standard cards and 1000 for mini European cards.
I’m not OP, but I got this set from Amazon that was more than enough for every card in my box. The only things I haven’t sleeved yet are any of the locked classes but I still have plenty leftover so I don’t see that being an issue.
Many here will recommend the helper app, it saves you from needing to set up a lot of components like monster stat sheets, their ability card decks, attack modifier decks for both you and enemies etc.
If you insist on using the physical components, card sleeves are always great. You do not need to sleeve everything if you find the card sleeves too costly, just sleeve your most used cards, items, attack modifiers, your ability cards. Here is a cheap set of sleeves I personally use.
Organisers are not cheap, and many really only help you pack components better, not really saving you space on the table. Feel free to google gloomhaven dashboards to see if they are what you are looking for and are within your budget.
I use these sleeves
Dephia 2000 Ct Gloomhaven Board... https://www.amazon.com/dp/B0719TN8MB?ref=ppx_pop_mob_ap_share
As for accessories, you have two good options: Etsy has a lot of things for sale. Alternatively, If you have a 3d printer or knows someone who does, I can share with you tons of links for items to print.
I sleeve almost all of my cards using these: https://www.amazon.com/dp/B0719TN8MB/ref=cm_sw_r_apan_glt_fabc_N07WTZEHBAS7TYT69CC9
$25 for 1,000 standard size and 1,000 mini Euro sleeves is the cheapest I have found so far. If anyone knows of something cheaper, I'd also love to know.
I like Dephia. The sleeves work out to just over a penny each, but feel like better quality than other penny sleeves. They have had issues in the past of sizes being a little too long or short, but they've been receptive to feedback and the recent ones I've gotten had a perfect fit. They also had complaints before about the sleeves sticking to one another from friction because of the material used, but I think that's gotten much better as well.
I generally load up whenever i see them in stock.. Their standard sleeves seem to be out of stock right now. When that happens, I buy their Gloomhaven bundle , which includes standard and mini-Euro sleeves.
You can also request custom sleeves via their website. I'm trying to get 7 wonders sleeve so I can sleeve Combo Fighter
I have this set and they aren't the most amazing, but they work. I've sleeved all small cards and the big ones in play. I'd rather just leave the sleeves on then put them on and off for this price. Left over sleeves we're enough for spirit island and terraforming mars.

I initially bought the Mayfair sleeves and was really unhappy with them because of how slippery they were as well as the sleeve width. Since then, I bought the Dephia package and am so happy with them. They are matte so not as slippery when in a pile, and the width is just perfect. If anything, the length on some of them is not consistent but that's much more manageable to me than the Mayfair sleeves. Amazon has a package of 2000 sleeves (1000 standard & 1000 Mini Euro) which allows you to sleeve everything.
I would recommend getting 3000 sleeves
I've only sleeved a couple hundred cards so far, but as we pull more cards out of the box, it's nice to be able to put them straight into sleeves.

My friend didn't want to spend $50 on sleeves for the game but still wanted to sleeve them, so she got this package. Not the best quality sleeves, but it's economical.

These turned out perfectly. Sleeved every card in the game and had plenty left over
I spent last night sleeving my copy. I purchased this pack: https://smile.amazon.com/gp/product/B0719TN8MB/ref=oh_aui_detailpage_o01_s00?ie=UTF8&psc=1 which is currently available unfortunately but I am satisfied with the quality and size. The minis seems to be about the same as your 70mm cards in that they have a bit of space at the top of the sleeve.
You're also right about it being oddly satisfying. It took me a couple hours while watching TV to sleeve everything already open. I didn't want to open any boxes to put sleeves in so I'm just going to have the sleeves ready for whenever a box is opened.
What kind of sleeves do you have? I recently purchased the BT insert as well as this pack of sleeves and wonder If i'm going to have to prepare for this issue.

i recommend you sleeve your most frequently used card.
Ability cards, attack modifiers, monster ability cards etc. You can wear them out very easily.

quantity over quality if you want to easily sleeve all cards in base gloomhaven and JOTL
Those are also what I bought, and was about to comment here. I got them three years ago and they've been great. We still have extras after unlocking nearly everything, though we forgot to use them for JotL. Just wish we'd finished the campaign before I had to move across the country, but I didn't expect it to take ~10% of my life.
They definitely aren't the sturdiest sleeves I've used, but most of the cards get very little shuffling/friction, so we have probably only broken about 30 of the 2000 sleeves in 3 years. I'm actually looking at ordering more for my own copy of Gloomhaven to play after I move from my current group.. If anyone wants the link for the same product on the US Amazon site, this is the exact one that I got:

These are cheap but of decent quality if you want to sleeve everything:
https://smile.amazon.com/Dephia-Gloomhaven-Sleeves-Standard-European/dp/B0719TN8MB/
There are approximately 1,700 cards in the game. With that said, not all of them need to be sleeved. But some you are constantly handling or shuffling, so sleeving would be good for the longevity of the game.
Check out this post from BGG as to which cards are suggested you sleeve, rather than sleeving them all: https://boardgamegeek.com/thread/1686797/comprehensive-sleeving-guide
Also if you're looking for decent, cheap sleeves, I purchased these off of Amazon for $25: https://www.amazon.com/dp/B0719TN8MB/ref=cm_sw_r_cp_apa_i_CVgwCb25Q700Z
2000 sleeves for $25 and you won't use all of them, so you'll have quite a few left over that you can use for other games if you'd like. They're not the greatest sleeves, but they work for me.
Not so much a specific order, no - the thing that comes to mind is that city/road events used when you start out are the 1-30 ones, separating out/adding back added/removed cards would be the main thing to do.
As to your question on the sleeves, check out this sleeving guide and this Amazon example.
What are the dimensions of these cards? I bought some for Gloomhaven a while back that I really like and could recommend.

You might be able to find them on eBay or somewhere else, but at the time when I bought, Amazon had the best price.
This was a very reasonable sleeving choice
https://www.amazon.com/gp/product/B0719TN8MB/
Inexpensive and seems to be plenty of sleeves for the base game plus Forgotten Circles
They are not super heavy duty sleeves, at all, but there isn't really that much shuffling as compared with something like Dominion
I have had a few split sleeves and a few mis cut sleeves but I've used more than half of them at this point and it's been pretty good.
Frankly better than any other sleeve I've gotten at anything near this price i.e. these are IMHO better than Mayday, as an example.

The full sized sleeves are a little long but it's not that big of a deal. The mini sleeves fit perfectly. More importantly it's a single purchase to sleeve the entire game.
I personally bought these to sleeve Gloomhaven when it comes in. They had pretty good reviews, and if I like them, I'll probably purchase the same set again for Frosthaven.
I used these to sleeve the cards and these to hold the sleeved items in numerical order. The sleeves work great for all cards even with shuffling, and the folder display pages are able to hold 4 sleeved cards without being crammed and without slipping out. Highly recommended. Links are to Amazon listings. I think the quantities here are already fine, but do your homework on that.
I got these.
Pretty decent and quality is decent. Tight fit and grippy.
I picked up a Gloomhaven sleeve set from amazon. They are not super high quality but they do the job, especially for only $20.
