Get her used to the tub first (no water). Make the tub a happy place, with lots of treats and good stuff in there. Once she's fine with the tub, you can start introducing water slowly.
Also does she really need a full bath every time she steps in poop? A MudBuster might be a better solution for that.
Just fill it with water and have a towel on hand. It really helps loosen up the mud that gets stuck between the paw pads.
Canadian doodle owner here, I do my own grooming too.
Keeping the legs shorter makes it easier to remove the snowballs - hopefully a professional groomer will chime in about whether that is a good/bad idea. My doodle is double coated so I keep her 1-3" long (1" on legs, longer on her body/head) and just sort of deal with the inevitable snowballs.
You can buy dog "snow pants" which look ridiculous but I'm sure it would work. There's no way I'm dressing my dog up in snow pants for just a quick pee in the back yard though which is enough for the snowballs to form!
A few things I've found that help:
i use either baby wipes, or if its muddy, then something akin to these
just make sure you have a towel handy as well cause that silicone thing leaves their paws very wet

For very muddy days I have one of these! I also have a regular sized bath towel cut in half and have each half by the door to wipe paws
I heard of these dog paw cleaners. It might help as he doesn't associate this with anything... yet. Then you'll just need to softly tap the paw dry with a cloth rather than rubbing.
I haven't tried it yet! My pup is ok with having his paws cleaned with a towel but as my area is getting muddier and muddied a towel doesn't really cut it anymore 😂. Reviews are great though!
My dog is bigger too and I did find this dog paw cleaning thing on Amazon. It's basically a glorified cup of water with a sponge. But it helps if your dog has furry paws like mine. Not necessary usually for dry paws. Every now and then will do unless your pup steps in something or has muddy paws.

A paw washer cup has silicone fingers that help to remove dirt and stuff that may be in the paw fur. I used to just wipe the paws clean, but then tried a paw cleaner with my new dog who is a digger. So much dirt was left in the cup! Then just towel dry. Wipes suck.

I use a paw cleaner at the doorway, and towel off with a rag. Helps to have an absorbent door mat too.

1) This is really preference. I bathe my dogs every week or so. I have severe animal allergies, grass allergies, and pollen allergies. In high pollen season I may bathe the dogs more frequently if they've spent time outside. Letting dogs up on the furniture is a personal preference. I love cuddling my dogs, so they are allowed up when they are invited. They never get up on the couch or bed without being asked first. This makes it easy for me to only let them up if they've been recently cleaned.

If you have someone with lots of allergies in the house, whether or not it's the dog bringing in pollen or people tracking it in, the best thing to do is keep the house clean. Have hard floors you can sweep daily and washable rugs, or invest in a carpet cleaner and vacuum and clean carpets regularly. Make sure anything cloth in the house can be washed (curtains, couch covers, blankets, etc) and then wash it regularly. Even though your poodle will produce less dander because he doesn't shed, he will produce a small amount. If you can keep this from accumulating on surfaces and keep your dog regularly bathed, you minimize any allergic reactions.

As far as the fecal bacteria thing, the largest source of this will be when your dog walks around the yard after pooping. They step in their poop sometimes. The best way to combat this is to pick up their poop right away. Other than that, you can think of your dog going in and out of the house just like you do, except your dog can't take off his shoes when he comes inside. So if your yard is clean enough that you would go barefoot and then walk around your house/up on your couch, you probably don't need to worry about your dog doing the same thing. If you walk your dog in public and don't want him tracking that inside, you can get a simple pet paw washing cup on amazon or similar (like this). Just put warm water and a tiny bit of ivory soap and give his paws a quick dip, then again in clean water, then wipe dry with a rag. Washing your dogs feet regularly can irritate them, so using a mild soap like ivory that doesn't strip away all their natural oils will be important.

Keep your dog's feet and booty trimmed really close to make hygiene easy. It takes me probably 20 seconds to clean my dogs feet on the way inside after a walk. If you're concerned about the booty, you can get a little packet of diaper wipes and just do a quick wipe after they do their business. I keep some on hand in case of dingleberries or ingested grass, but 99% of the time there isn't any residue on their little booties.

2) One of my poodles in insanely picky and I ended up cooking (!!) for him for years or he would just not eat for days. The other will eat literally anything I put in her bowl or drop on the floor (including pine cones, lettuce, and pieces of cardboard). You'll just have to see what your pup likes and talk to your vet about how to meet his needs. If you're considering a raw or custom diet, talk to your vet. They can help you make sure you're meeting macro and micro needs. I avoid raw food because I don't want raw meat or the associated germs around my house or in my dogs mouth with he kisses me.

3) Your dog will probably want to be where you are most of the time, so he probably won't use a room created just for him. Having a crate, however, can be a godsend. It gives your dog a safe quiet space all his own and can feel like a den to him. It is also a safe space to leave your dog if he needs to be unattended or if you're working on house training. Consider researching crate training or talking to a trainer. It is critically important that you introduce your dog to its crate correctly or you can develop anxieties in your dog that will make it impossible to ever safely crate them.
