You could pick up a pH test kit (strips) to get an idea what the pH is at. I use a cheap electronic one for my other hobby and it works really well.
You will probably need to take a spoonful and add some water in a cup to get enough liquid for the meter to read.

Catching rain water and using it is best for bonsai. Just depends on your tap water. I suggest getting a ph pen tester. Anything below 6.8-7 ph is fine for bonsai. I use this one

50/50 is the standard minimum. Refrigerate and/or eat quickly.

As for me, it's now fridge pickles or nothing. My first year I made something like 60L of water bath canned pickles. Trimmed the blossom ends, used pickle crisp, but 2-3 years later the pickles were still fine but inedible to me because of the texture.
