I also use these in our trailer for the bunks, I find them to be very sturdy just going under the bunk mattresses, and the safety strap/anchor it comes with, I slide it under the wooden slats on the bunks, the bottom anchor actually goes down into the under bed storage, the top bunk anchor just goes under the plywood base of the top bunk. It will be obvious when you receive it, but I find these to work perfectly.

Last season we had our 4-6 mo old in the bottom bunk with no stress, and we had our friends 2 year old on the top bunk, safe the whole time. We will be using the same set up this summer.
For the tossing and turning, can you get a half rail to put on the bed? That way it provides a barrier so she doesn't fall off, but there's still a gap for her to climb down if she wants. Kind of like: https://www.amazon.com/Dream-Me-Mesh-Security-Rail/dp/B00MTJWT68/ref=asc_df_B00MTJWT68
As for the sleeping on the floor, sometimes toddlers just want to do that. My toddler wanted to sleep by her closet for a few days and then went back to her bed. I think it's just a new experience to have that kind of freedom
If you've recently moved your toddler to a "big bed" from a crib, they're probably not used to the open feeling. My kiddo fell out of bed a few times. We got a toddler rail like I've linked below. I swear I didn't spend even $20 on it tho, and it made all the difference.

I got one of these off Amazon:

Instead of using the legs, I drilled 2 holes to slot the rail in to. It holds very snug.
You could also use a rail that goes under the mattress.

I moved my mattress to the floor-- it's not pretty but it works? And they do make these mesh bed rail thingies you could try to attach to the sides. Like this: https://www.amazon.com/Dream-Me-Mesh-Security-Rail/dp/B00MTJWT68/ref=sr_1_6?crid=7XSMENBGJYGR&keywords=bed+rails+mesh&qid=1669822447&sprefix=bed+rails+mesh%2Caps%2C73&sr=8-6

I'm here cause my kid is 6 months and does EXACTLY what you describe and I am feeling the same way. Solidarity.

We actually were GIVEN ours when we had our baby. I had no idea they existed either. I went on to loan mine out to several families and they kept returning it after they were done using it for a year or so each. I finally got a family to take it and keep it, lol.
I've also heard of families putting a pool noodle under the fitted sheet as it creates a barrier, but I think that's more for the newborn stage.
