The monster manual you can get on amazon here
I'm away from my computer and I don't know how to link the amazon page with the app, so here's the monster manual
Below the price $27.99, there is a savings ribbon with a link to find the selection.
That's disappointing. MM on Amazon goes for $36.28, but I'd gladly pay the full $50 if it included a digital copy.
Help me by your stuff, WOTC!!
For anything other than the Starter Set, buying the Monster Manual is pretty much essential for any adventure you want to run. That's how it generally works: the module mentions the monster, usually in bold, and that's your signal to look it up in the MM. You can order a copy here: https://www.amazon.com/Monster-Manual-Core-Rulebook-Wizards/dp/0786965614
alternately, the same link unshortened: https://www.amazon.com/gp/product/0786965614/
or the Amazon Smile charity link: https://smile.amazon.com/gp/product/0786965614/
Probably want to add a copy of the Monster Manual but you about have it covered.

>how do people decide how strong a goblin is
You can use any of the official stats from the SRD for free or by the monster manual for ~ $30. After you have a basic idea of monster balance, you can pretty easily modify them on your own.
>what npc sells what
The short answer is whatever you want them to sell.
In most towns, a blacksmith would be available for basic weapons and tools and maybe armor. The bigger the town, the more they can make and the more skilled they are. They might even have some premade for just such an occasion.
Most towns will have an inn for travellers and a general store for basic items. Most supplies will be available in these stores.
Currency I would suggest treating 1 copper equal to $1. This give you a baseline for guessing prices when it's not in the players handbook. 1copper=$1, 1silver=$10, 1gold=$100
>when a character levels up.
There are two basic ways to do this.
XP After a combat encounter, add up all the XP values for the enemies, and divide it equally between the players. When they have enough XP to reach the next level (there is a table in the handbook), they level up. Some dms will make players wait until they are safe in town or have some downtime to actually do the level up process. This is up to you.
Milestones This is a more abstract method. With this method, you tell the players when they level up. Usually every 3-4 sessions and ideally after important events in-game. This give you a bit more control over how quickly characters gain levels.
Each class had a list of the features they gain at each level. They all also gain more HP based on their class's hit die. Proficiency also goes up every couple levels.
Well, That's a complicated question. I would think that for all monsters that exist in the DnD universe as a whole you would need to go to the edition with the most published monster manuals. My guess would probably be 3/3.5 for that. It has five Monster Manuals as well as several other compendiums. You can find a full list of the books for that edition in this thread.
If you want all the monsters that are in use in the current edition (5e) then you need to pick up the Monster Manual and Volo's Guide to Monsters for the vast majority of them.
Here. Now you can play 5E. This document will also be updated after the release of the PHB, DMG, and MM to include more information.
Pricetag still bothering you? Wizards is giving you all you need to run a game online for free, so it really shouldn't be. And have you been to a bookstore lately? A 320 page hardcover, full color book is quite justified in being in the ~$50 range. I don't think the pricing is a problem at all.
NPCs in D&D have their stats listed in 3 possible locations: either the Monster Manual, the Dungeon Master's Basic Rules or in an adventure book.
So for example, a Goblin's Stealth bonus is +6. I know this because I checked it's stat block in the DM Basic Rules (page 30). As I said though, their stat blocks are also available in the Monster Manual (page 166) and in the Lost Mines of Phandelver official adventure book (page 58).
The large majority of enemies available for your use are in the Monster Manual.
