Many production shops use postal scales like this one. I don't do large volumes anymore so I use this great food scale that allows me more accuracy for small discharge batches. Also works great for weighing hops when I homebrew =)
Read this to get started but keep in mind that the vast majority of the printing world uses weight ratios and you will need to understand additive and subtractive weight methods if you ever implement a Pantone mixing system.
