I meal prep lightly following this book:Easy Keto Meal Prep
I've been going through the book and trying 3 recipes a week. Some of them are not for me but these ones stick and I'll make them again:
Burger w/bacon eggncheese: 1.6g net carbs, 534 cal Coconut curry chicken with cauliflower rice: 0.6g net carbs 506 cal Sesame beef coleslaw: 5.7g net carbs, 402 cal Lamb koftkas with garlic yogurt sauce: 0.5g net carbs, 351 cal Italian-style frittata: 3.2g net carb, 376 cal Chicken Burrito Bowl W/Cauliflower rice 4.4g net carb, 476 cal
Snacks: Bacon, Summer sausage, cheese, no sugar added peanut butter, quest bars. Roasted broccoli or brussel sprouts with blue cheese dressing to dip.
I picked up a new cook book a little over a month ago and I've been really enjoying cooking my way through it. My husband, who isn't keto, has enjoyed all of the meals. I usually add some rice, noodles or additional sides for him and my toddler.
I love how simple the recipes are, which also keeps our grocery budget low. They're quick to throw together the night of if you don't go the Meal Prep route (like me). And, they make great leftovers for lunches the next day.
