I can't recommend Endurance enough. It's all about Ernest Shackleton's attempt to cross Antarctica. Amazing!

First-person accounts: 'The Worst Journey in the World' by a member of Scott's expedition.
'10, 000 Miles with a Dog Sled' by explorer Hudson Stock.
Narrative non-fiction: The classic Endurance by Alfred Lansing, a superb account of Shackleton's voyage, told with a little more time and distance from the events.
In the Kingdom of Ice. Just finished reading this very well-researched and engaging book on a lesser-known expedition. It goes into more historical context than you might be after (the sponsors of the trip, the participation of the press, the prevailing scientific attitudes of the time), but it's worth it. Delves deeply into the lives and relationships of the major members of the party.
If it's not just the polar regions that interest you, there are several books about Stanley and Livingstone, and Stanley's personal account is free to read online.
Also, have you tried something like John Krakauer's 'Into Thin Air,' or Eiger Dreams?
